Overall Responsibilities

To coordinate the on the floor operations of the Stone House Dining Areas, the set-up, service and clean-up of all reservations, group bookings and patrons of the restaurant. Provides knowledgeable, personalized and safe food and beverage experiences to our guests.

Essential Functions

  • Ensures the serving staff follow the proper steps for wine service, sparkling wine service, wine pairings and fine dining.
  • Ensures the serving staff follow the 12 steps of service.
  • Communicates effectively with management, co-workers, employees, guests.
  • Notifies Management when supplies are low.
  • Liaises with other servers, bartenders, cooks and managers to effectively service guests.

NAV CENTRE is seeking a dynamic individual to fill the role of Line Cook in Cornwall, Ontario.

Overall Responsibilities

To manage the daily functions of the Stone House kitchen under the supervision of the Executive Chef and the Sous Chef. The Line Cook will accurately and efficiently prepare, portion and cook a la carte.

Essential Functions

  • Provides the highest quality of service to customers at all times.
  • Uses a positive demeanor and approach.
  • Delegates station responsibilities to the prep cooks.
  • Leads by example when assigning, training or completing tasks.
  • Answers any recipe and production questions.
  • Reviews “Count Report” and base production needs accordingly.
  • Complete “Prep & Pull” lists and pull items as needed.

Qualifications

  • Must be able to work shift work ie. Weekends, nights, days, holidays and a varying schedule as business demands.
  • Valid food-handlers certificate.
  • Culinary training certificate, diploma or equivalent.
  • Experience working in a fast pace demanding high stress environment.
  • Minimum experience level is 3 years in a similar role in a high-end restaurant.

Overall Responsibilities

To serve drinks to Stone House guests in a prompt and friendly manner and to ensure the bar area / serving area is safe, sanitary and hazard free.

Essential Functions

  • Provides the highest quality of service to customers at all times.
  • Adheres to the daily, monthly and additional cleaning schedules as requested.
  • Adheres to all the cash and credit guidelines.
  • Gets the bar keys from the supervisor at the beginning of each shift if necessary.
  • Ensures that the register and credit card machine are working properly.
  • Verifies the par inventory and restock if needed for the shift.
  • Creates the bar and/or liquor order if required.
  • Ensures all glassware is clean and available.
  • Ensures everything is clean, and the bar is ready to open.
  • Strictly adheres to the LSOP for serving guests.
  • Performs accurate cash transactions in a prompt and friendly manner.

  • Provides the last call for service 15 minutes before closing time.

  • Prepares the cashier report.
  • Cleans and sanitizes the work area at the end of the day and lock down the bar area.
